Scandi-chic food for the weekend

If like us, what you’re going to cook and eat is a big part of your weekend then you’ll love this selection of new recipes to the library from David Frenkiel and Luise Vindahl of Green Kitchen. While not exclusively Scandinavian (David is Swedish, Luise is Danish, and they live in Sweden), the Scandi vibe is strong in Green Kitchen at Home and this is exactly what we want to eat this weekend.


For Saturday

Start the day with a speedy breakfast 

Mix and match the toppings like these Spectacular rye slices if you need a sweet hit to start the day or stay savoury with the avocado.

Enjoy pancakes for lunch 

Blitz your batter with spinach leaves and basil for a colourful crepe. This recipe, Spinach crepes filled with creamy chickpeas and mushrooms, also works a treat with hummus, cottage cheese, feta or even roasted roots as the filling.  

Make a stress-free dinner for friends

Start with Lemon ricotta lasagne for a crowd and finish with Black bean mocha mousse cake. Your guests will be bowled over by the flavours and you’ll be impressed by the easy-to-follow recipes.

For Sunday

Take time over a leisurely breakfast

Baked carrot cake oatmeal is the perfect recipe for this time of year, when you’re not sure exactly what the weather will be like outside. Either way, it is sure nourish you and to keep you satisfied until lunchtime.

Try a roast alternative

If Sunday lunch is a tradition in your house, then this colourful Mediterranean tray bake with halloumi chunks has roast veg at the centre and will give you good reason to lay the table and gather round it as usual. And just like a roast, the oven does all the hard work. 

Finish the weekend with a twist on a family favourite

Better than a takeaway this Cauli fish and chips is sure to become a winner in your house. Make a double batch of the cauliflower bites, they freeze brilliantly.
