Richard Burr bakes a festive batch

We spoke to 2015 GBBO finalist Richard Burr, to find out what he’ll be baking this Christmas

The showstopping centrepiece – Swedish Wreath


So it’s Christmas week and you’ve got a stream of visits from friends and family, bake one of these and you’re sorted for any lazy afternoon interruptions. It also has a great effort-to-glory ratio – it’s really not that difficult to make but looks spectacular! You can’t beat it with a huge pot of tea, the fire on, and reminding your loved ones not to fight over the last slice during the season of goodwill! 



The crowd pleaser – Sausage Rolls


I’m yet to find out how long these last for as I’ve never made a batch to survive long enough to go cold. These are one of my most requested bakes at Christmas and they fly out of the kitchen as fast as I can make them. Make double or triple batches and there still won’t be enough to go around. The chilli gives them a warming kick on a cold evening and they’re the perfect accompaniment to a vat of mulled wine. Just don’t forget to stock up on red and brown sauce!



The kid's favourite – Gingerbread House


This is a real tradition in our house. Once the Christmas tree is up and decorated, the kids and I get started on making gingerbread. We usually have a big gingerbread house for the kids to bling-up with sweets and icing. They’re not allowed to start eating it until Boxing Day and it rarely makes it ‘til New Year’s Eve. We’ve also been known to have gingerbread house decorating parties, with the kids all getting mini houses of their own to decorate and me doing my best Paul Hollywood judging of their efforts.



The edible gift – Christmas Cake


I really love Christmas cake. It’s also a big favourite of my mum, my mother-in-law, school bake sales, raffle prizes... so I find myself making lots of these in October and November and creating a shelf-full of Christmas cakes to feed with brandy every few days. Making your own marzipan is so easy and I love the taste of royal icing too, but sometimes I’ll do these with fondant and then pipe festive decorations on them with royal icing instead. They’re a fantastic gift that is always so well appreciated.



The Christmas morning breakfast bake – Simple White Bloomer


I’m a Christmas breakfast traditionalist. It has to be bucks fizz, smoked salmon, buttery scrambled eggs, and thickly cut, toasted white bread. My white bloomer is so easy to make and if you knock one up on Christmas Eve as I do, you can get all the last-minute presents wrapped while you wait for the bread to prove. It’s also an excellent and welcome restorative if you’ve celebrated Christmas Eve a bit too hard. Just saying... 



The bake for non-bakers – Mincemeat Cupcakes


I don’t bake cupcakes very often these days, but I always make an exception for these at Christmas time. They’re one of the favourite recipes from my book, mainly because people are usually a bit sceptical until they taste one. They are absolutely delicious and simple to make too. If you’re a little nervous of piping icing, just spread the brandy buttercream on top and you’ll still end up with a cracking Christmas treat to share. Honestly, if you are going to try anything new this Christmas, have a crack at a batch of these - you won’t regret it!
