Scandi-chic food for the weekend

If like us, what you’re going to cook and eat is a big part of your weekend then you’ll love this selection of new recipes to the library from David Frenkiel and Luise Vindahl of Green Kitchen. While not exclusively Scandinavian (David is Swedish, Luise is Danish, and they live in Sweden), the Scandi vibe is strong in Green Kitchen at Home and this is exactly what we want to eat this weekend.

Blitz your batter with spinach leaves and basil for a colourful crepe. This recipe, Spinach crepes filled with creamy chickpeas and mushrooms, also works a treat with hummus, cottage cheese, feta or even roasted roots as the filling.

Start with Lemon ricotta lasagne for a crowd and finish with Black bean mocha mousse cake. Your guests will be bowled over by the flavours and you’ll be impressed by the easy-to-follow recipes.

Baked carrot cake oatmeal is the perfect recipe for this time of year, when you’re not sure exactly what the weather will be like outside. Either way, it is sure nourish you and to keep you satisfied until lunchtime.

If Sunday lunch is a tradition in your house, then this colourful Mediterranean tray bake with halloumi chunks has roast veg at the centre and will give you good reason to lay the table and gather round it as usual. And just like a roast, the oven does all the hard work.
