With more than 200 of his recipes in the library, we asked Nathan Outlaw to pick out a few of his favourites for us so we could get cooking.



Nathan’s picks from British Seafood


Port Isaac lobster risotto with orange and basil




It was my first real dish from my first restaurant The Black Pig where customers would return for that dish alone. My first classic! I still have it on the menu from time to time even now.


Grilled lemon sole with crispy oysters, cucumber, horseradish and lemon




This is a dish that shows the lemon sole at its best. Lightly grilled when it's in its best condition and in season, lemon sole kicks all other flat fish into touch for me.


Red gurnard soup with samphire and orange




If you follow this recipe, taking extra care with the method, I promise you will have the tastiest bowl of fish soup you have ever had. Gurnard is perfect for making soup. This underrated fish has the body and the flavour to do the business.


Turbot with tartare sauce 'my way'




To this day this dish is my showpiece. It travels with me everywhere and will pop up at any of my restaurants in different guises quite often.

Raw queenie scallops, tomato water dressing and crisp-fried queenies




This is my favourite raw dish when tomatoes are amazing. I think the sweet scallops work so well with the summer's best tomatoes.


Whisky cured salmon with kohlrabi




I like this dish a lot, because the flavours work so well together. This is a perfect dish for dinner parties, because everything can be done in advance.


Pickled herring with red pepper marmalade and shellfish dressing




This dish is a very different herring dish... and that is why I love it.


Cuttlefish fritters in a squid ink and red pepper sauce




This is a recipe that I would really like people to try and cook. It's a bit of work, but it's well worth it. Also cuttlefish is one of those species that we should be eating more of and this is a great way to try it.


Steamed bass and tomatoes with a sardine and tomato ketchup




This dish is my favourite steamed dish in my book. Bass really has a very different quality about it when steamed, obviously in a very tasty way. With the ketchup on the side it really is good.
