Black pudding, it’s fair to say, is firmly in the ‘love or hate’ category as far as ingredients go. So, we’ll spare the details and just appeal directly to its fanbase. Although it has a real depth of flavour, black pudding can be pretty versatile; at Peter Gordon’s acclaimed fusion restaurant, Kopapa, black pudding gets to shine at brunch, simply served with grilled tomatoes and beans. At Social Eating House, however, it adds extra richness and savoury notes to a pot of pork rillettes with piccalilli. At tapas bar Jose, Spanish-style black pudding, morcilla, gives surf and turf is given a more robust twist in a dish of sea bream, morcilla and peppers.
