The lunchbox edit: Red peppers

Each week, we take some of our favourite recipes and give them a little tweak to make perfect packed lunches. Sweet and crunchy with a slightly bitter edge, red peppers provide a distinct and bold burst of flavour. Use these recipes to add some excitement to your weekday.

Red pepper dip

This red pepper dip is a great relaxed starter at the weekend, but if you have any leftover, it's also great spread on sourdough and topped with soft goat's cheese or feta.

Roasted pepper soup

Ideal for a light lunch, just keep this soup in the fridge then add a couple of ice cubes at lunchtime.

Red pepper salad

These grilled red peppers are delicious on their own, but put them in a wrap with tinned tuna and black olives, and you have yourself a show-off packed lunch.

Paneer and red pepper

Make this curry on Meat-free Monday, then heat up your leftovers on Tuesday. Great with naan or chapati.

Carpaccio of beef

Skye Gyngell's beef carpaccio is simple sophistication at its best; the red pepper relish also works well with any leftover roasted meats or cheese you have, too for a quick cracker-based snack.
