Each week, we take some of our favourite recipes and give them a little tweak to make perfect packed lunches. We're kicking things off with barley; this glorious grain makes for a filling and wholesome weekday lunch.

Warm barley with roast pumpkin and feta

This glorious grain makes for a filling and wholesome weekday lunch. If you cook a few portions on Sunday, you can vary how you use them throughout the week. Roasted pumpkin can be made in advance, then mixed into your grains the night before work.

If you are getting tired of your usual granola breakfast or flapjack snack, try a portion of this sweet, lightly spiced barley dessert.

Make a batch of this lamb and barley soup at the weekend, then reheat at lunchtime for a fast but filling lunch.
