The lunchbox edit: Noodles

Each week, we take some of our favourite recipes and give them a little tweak to make perfect packed lunches. We're kicking things off with noodles; whether wheat, egg or rice, they make a filling base to your midday meal. 

Cold chicken spice Suchuanese sauce

If you've got any cold roast chicken left over from the weekend, make Fuchsia Dunlop's cold chicken with a spicy Sichuanese sauce then throw in a portion of cooked egg noodles to bolster it. 

Creamy almond vegetable curry

On Meat-free Monday, make Anjum Anand's creamy almond and vegetable curry, save a portion for the next day's lunch and heat up with some cooked rice noodles, finishing with a squeeze of lime. 

tahini yoghurt sauce

Seed and nut-based sauces such as Greg Malouf's tahini-yoghurt sauce go really well with wheat noodles. Just mix them cold with this sauce, then add shredded cucumber and spring onion for a simple cold noodle salad. 

Fish and seafood skewers

If you have dinner guests, you can make a couple of extra seafood skewers, then pack up with cooked noodles and a sprinkling of soy sauce. 

Tofu and seaweed miso soup

And if healthy and light is required, Makiko Sano's tofu and seaweed soup just requires some water from a kettle. Add thin rice noodles to the broth that just require soaking, and you'll have a low fat, low calorie meal.
