Cauliflower cheese is an old-school comfort food favourite and is an ideal candidate for the posh treatment. With the florets poached to softness and a rich and creamy Mornay sauce, they become the perfect addition to a crisp slice of toasted seed bread.

Ingredients

Quantity Ingredient
1 small cauliflower, broken into small florets, (about 600g)
25g butter, plus extra for spreading
25g plain flour
300ml milk
200g grated mature cheddar
1 teaspoon english mustard
1 egg yolk
4 slices caraway or seeded bread
freshly grated nutmeg
few handfuls watercress, (optional)
salt
freshly ground black pepper

Method

  1. Bring a large pan of water to the boil. Drop in the cauliflower florets and simmer for 5 minutes, or until tender. Drain and set aside.
  2. Melt the butter in small saucepan over a medium heat. Stir in the flour to form a paste. Gradually pour in the milk, whisking all the time until you have a smooth sauce. Bring to a simmer, keep whisking, and let it bubble for 2 minutes, until thickened. Add most of the Cheddar, the mustard and some seasoning. Stir until melted, then remove from the heat and pop in the egg yolk. Stir to combine, then fold through the cauliflower.
  3. Heat the grill to medium. Lay the bread on a baking tray, and lightly toast both sides. Spread with butter then divide the cauliflower between the slices. Sprinkle over the remaining cheese and pop under the grill for a few minutes, until golden and bubbling. Finish with a good grating of fresh nutmeg. Serve with watercress leaves, if liked.
