Bacon soldiers soft-boiled egg

Boiled eggs and ‘dippy soldiers’ are a childhood favourite that could surely never be improved upon… well, actually, almost anything can be made more gorgeous with the magical addition of bacon. Bacon butter can be made ahead of time and kept refrigerated.

Ingredients

Quantity Ingredient
2 rashers smoked streaky bacon
2 eggs
25g butter, softened
2 slices white farmhouse or granary bread
freshly ground black pepper

Method

  1. Bring a pan of water to the boil and heat the grill. Cook the bacon on a foil-lined tray under the grill, turning once, until really crispy. Remove and set aside to cool.
  2. Carefully lower the eggs into the pan of boiling water, set the timer and simmer for 5½ minutes.
  3. Meanwhile, finely chop the cooled bacon. Mash the butter in a bowl and stir through the bacon bits and some black pepper. Pop the bread under the grill and toast both sides, then spread with the bacon butter whilst warm and cut into soldiers.
  4. Once the eggs are ready, lift them out of the water into egg cups and serve with the soldiers.
