Kebab for breakfast often means an early-morning stumble into the arms of a takeaway, a little the worse for wear. But not any more! This breakfast naan is packed with healthy, tasty ingredients with zero guilt attached.

Ingredients

Quantity Ingredient
2 naan breads
2 tablespoons olive oil
1 large avocado, halved, stoned and thickly sliced
100g cherry vine tomatoes
2 eggs
2 tablespoons chilli jam
handful coriander, roughly chopped

Method

  1. Heat the naan breads according to packet instructions until hot and fluffy.
  2. Meanwhile, heat a griddle pan to high. Drizzle about 1 teaspoon of the oil over the avocado slices and tomatoes, then cook for 3–5 minutes, flipping the avocado halfway through cooking to char both sides and give the tomatoes a shake – you want them to soften but still hold their shape.
  3. Heat the remaining oil in a frying pan. Crack the eggs into the hot oil and cook to your liking.
  4. Spread the hot naan breads with the chilli jam, slide a fried egg onto each, followed by the griddled avocado slices and tomatoes. Finish with the coriander, roll up, and eat.
