Lemon monkfish skewers

These sophisticated skewers are built from a handful of fresh ingredients and a couple of dried spices. They’re quick and easy to assemble, but the taste belies their simplicity.

Ingredients

500g monkfish, cut into 2.5cm cubes
2 garlic cloves, finely chopped
1 red chilli, deseeded and finely chopped
1 teaspoon dried oregano
1 lemon
1 tablespoon olive oil
salt
freshly ground black pepper

To serve

buttered basmati rice
kachumba salad, (optional)

Method

  1. Put the monkfish into a large bowl with the garlic, chilli, oregano, and plenty of seasoning. Cut the lemon in half, juice and zest one half and pour over the monkfish with the oil. Stir to combine. Cover and leave to stand for 15 minutes.
  2. Cut the remaining lemon half into small wedges, then thread onto 4 large or 8 small skewers, alternating with the monkfish.
  3. Heat a barbeque or grill to high. Cook the skewers for 6 minutes, turning halfway through and brushing with any remaining marinade, until cooked through.
  4. Serve with buttered basmati rice and katchumba salad (if desired).
