Ingredients

Quantity Ingredient
300g tomatoes, on the vine
2 garlic cloves, unpeeled
2 jalapeños
1 teaspoon sea salt
1/2 lime, juiced

Method

  1. Heat a large frying pan and dry roast the whole tomatoes, garlic and jalapeños for 5 minutes, until charred. Remove to a chopping board.
  2. Peel the garlic, remove the stems from the jalapeños and roughly chop them with the tomatoes.
  3. Using a large mortar and pestle, pound the ingredients along with the sea salt, until well broken down (if you don’t have a large enough mortar and pestle to hold all the ingredients, crush them in batches). Season with the lime juice and more sea salt to taste, and serve.
