Ingredients

150g cherry tomatoes on the vine
1/2 onion, thinly sliced
1 habanero chilli
1 garlic clove, unpeeled
2 tablespoons coriander, chopped
1 teaspoon sea salt

Method

  1. Heat a large griddle pan until smoking and char the whole tomatoes, onion, habanero chilli and garlic. After 4 minutes, turn everything over so it can cook on the other side and griddle for a further 4 minutes. Remove to a chopping board.
  2. Peel the garlic, remove the stem from the chilli and then transfer everything to a blender or food processor and pulse very briefly until everything is roughly blended.
  3. Transfer to a bowl and allow to cool down. To serve, stir through the coriander and season to taste with sea salt.
