Ingredients

400g sirloin steak, cut into 1-cm slices
2 tablespoons olive oil
1 tablespoon oregano
1/2 onion, finely sliced
1 garlic clove, minced
1/2 teaspoon sea salt
125g chorizo, diced
warm tortillas, to serve
see method for ingredients, to serve

Method

  1. Place the steak in a bowl and mix with one tablespoon of the olive oil, the oregano, onion, garlic and sea salt. Cover and refrigerate for at least 1 hour.
  2. When you are ready to eat heat the remaining olive oil in a frying pan and fry the chorizo on a medium heat for 3–4 minutes, until cooked through.
  3. Turn the heat up to very high and then add the marinated steak and onions. Stir-fry very quickly for 45 seconds for rare, 1 minute 30 seconds for medium, or 2–3 minutes for well done.
  4. Pile into tortillas with salsa and serve hot.
