Jerk chicken wings

2 tablespoons see method for ingredients
2 tablespoons soy sauce
2 spring onions, roughly chopped
2 garlic cloves, peeled
1/2 white onion, roughly chopped
1 scotch bonnet chilli, deseeded
2 tablespoons vegetable oil
2 tablespoons dark brown sugar
1 teaspoon sea salt
800g chicken wings

Method

  1. Blitz the jerk seasoning, soy sauce, spring onions, garlic, onion, chilli, oil, sugar and salt together in a food processor.
  2. Rub the marinade all over the chicken wings and refrigerate for 1 hour, or overnight.
  3. Preheat the oven to 170°C. Transfer the wings to a baking dish and roast for 40 minutes before increasing the oven temperature to 200°C and roasting for a further 20 minutes.
  4. Leave the chicken wings to rest for 5 minutes before serving hot.
