Hot pepper shrimp

Ingredients

200g raw tiger prawns, with shells on
3 garlic cloves, minced
1 red scotch bonnet chilli, deseeded and finely minced
4-5 sprigs thyme, leaves only
2 teaspoons sea salt
1 teaspoon ground allspice
1 teaspoon freshly ground black pepper
lime wedges, to serve

Method

  1. Tip the prawns into a large plastic bag along with the garlic, chilli, thyme, salt, allspice and black pepper. Mix well through the bag until the prawns are evenly coated, then refrigerate for 1 hour.
  2. Bring 50ml water to the boil in a large saucepan, add the prawns and reduce the heat to a simmer. Stir constantly for 3-4 minutes until the prawns are pink and lightly coated in the sauce. Serve immediately with lime wedges on the side.
