Ingredients

2 tablespoons vegetable oil
1 onion, finely sliced
2 garlic cloves, minced
1/2 scotch bonnet chilli, deseeded and finely chopped
175g okra, sliced
1 teaspoon sea salt
freshly ground black pepper

Method

  1. Heat the oil in a large frying pan, add the onion, garlic and chilli and stir-fry on a medium heat for 10 minutes until golden brown.
  2. Add the okra and stir-fry for a further 6-7 minutes until softened and cooked through. Season to taste with the sea salt and pepper, and serve hot.
