Ingredients

2 just-ripe plantains
100ml vegetable oil
sea salt

Method

  1. Peel and slice the plantains into 1-cm diagonal wedges.
  2. Heat the oil in a frying pan and, working in 2 batches, fry the plantain wedges on a medium heat for 2-3 minutes on each side until golden brown. Transfer to a plate lined with kitchen paper, and continue until all the wedges are fried. Scatter with sea salt and serve with the Fried Bake, Curry Goat or Chicken Curry.
