Ingredients

Quantity Ingredient
1/2 green cabbage, very finely sliced
1 red onion, very finely sliced
1 medium carrot, very finely sliced
2 red scotch bonnet chillies, deseeded and very finely sliced
3 garlic cloves, minced
1 tablespoon black peppercorns
5 cloves
1 scant tablespoon sea salt
1 lime, juiced
200ml white wine vinegar

Method

  1. Mix all the ingredients in a bowl, and leave to marinate at room temperature for at least 1 hour before eating. This will keep well for up to a week in an airtight container in the fridge. Serve with any of the jerk dishes in the book.
