400g macaroni
500ml evaporated milk
3 eggs, beaten
200g grated strong cheddar cheese
175g grated mozzarella cheese
1 teaspoon sea salt
freshly ground black pepper

Method

  1. Preheat the oven to 200°C. Bring a large pan of salted water to the boil, add the macaroni and cook for 9 minutes. Drain well in a colander.
  2. Meanwhile, whisk the milk and eggs together in a bowl, then stir in half the cheese, the salt and plenty of pepper. Once the pasta is cooked, stir the cheese mixture through it, then transfer to a buttered lasagne dish.
  3. Top with the remaining cheese, scatter with more pepper and bake in the oven for 30 minutes until the cheese is golden and bubbling. Allow to cool slightly before cutting into squares and serving.
