300g plain flour
2 teaspoons baking powder
1 teaspoon sea salt
1/2 teaspoon caster sugar
20g cold butter, cubed
500ml vegetable oil, to deep-fry

Method

  1. Mix the flour, baking powder, salt and sugar together. Add the butter and work together with your hands until the mixture resembles breadcrumbs. Gradually add 155ml water and work together for 2 minutes until it is a smooth dough.
  2. Place the dough in an oiled bowl, cover and leave to rest at room temperature for 30 minutes.
  3. Heat the oil in a large wok to 180°C, or until a cube of bread fizzes and turns a light golden brown within 30 seconds. Divide the dough into 8 portions, and roll each into a flattened disc, about 8cm wide. Fry 2-3 pieces of dough at a time for 30-40 seconds on each side until golden brown. Drain on kitchen paper and continue with the rest of the dough. Serve with curry.
