Ingredients

Quantity Ingredient
300ml cider vinegar
5 teaspoons sea salt
5 scotch bonnet chilies, pierced
5 jalapeño chillies, pierced
5 garlic cloves, peeled
1 teaspoon black peppercorns
1 bay leaf

Method

  1. Mix the vinegar and sea salt together. Place the chillies, garlic, peppercorns and bay leaf into a 500-ml screw-top or clip-top jar, then pour the vinegar over the top of all the ingredients.
  2. Cover the jar, then leave to marinate for 3–4 days before using the vinegar as a spicy condiment. Once opened, store in the fridge for up to 2 weeks.
