Ingredients

Quantity Ingredient
4 tablespoons dried thyme
2 tablespoons allspice berries
4 tablespoons black peppercorns
2 large cinnamon sticks
2 teaspoons cayenne pepper
2 teaspoons sea salt
1/2 nutmeg, freshly grated

Method

  1. Place all ingredients in a large frying pan and heat on a medium heat for 7–8 minutes, stirring frequently until aromatic.
  2. Allow to cool, then grind in a spice grinder or with a pestle and mortar. Store in an airtight jar for up to 2 months.
