Ingredients

Quantity Ingredient
1 head garlic, peeled
1 teaspoon sea salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
15ml orange juice
15ml lime juice
25ml olive oil

Method

  1. Mash the peeled garlic cloves with the salt, cumin, oregano and pepper using a pestle and mortar.
  2. Scrape the mixture into a bowl, and stir through the orange and lime juice.
  3. Heat the oil in a small pan until just warm, then stir this into the garlic mixture. Taste and add more salt and pepper as needed, and allow to cool to room temperature before storing in the fridge. This will keep for a week, and can be used as a marinade or sauce for meat and vegetables.
