Ingredients

200g long-grain white rice
400ml evaporated milk
400ml coconut milk
75g caster sugar
6 cloves
1 stick cinnamon
1 teaspoon freshly grated nutmeg
1 teaspoon ground ginger

Method

  1. Soak the rice in 3 times its volume of water for 2 hours, then drain well. Transfer to a saucepan and cover in 3 times its volume of water again, and bring to the boil. Reduce the heat and simmer for 10 minutes, then drain well.
  2. Tip the cooked rice back into the saucepan along with the evaporated milk, coconut milk, sugar, cloves, cinnamon, nutmeg and ginger. Bring to the boil, then reduce the heat and simmer for 20 minutes, stirring constantly until thickened. Taste and add a further few tablespoons of sugar if you wish.
  3. Allow to cool, and serve at room temperature.
