Ingredients

1 tablespoon vegetable oil
1 onion, finely sliced
2 garlic cloves, finely chopped
2.5cm ginger, finely chopped
1/2 scotch bonnet chilli, deseeded and finely chopped
1 teaspoon Jamaican curry powder
300g green beans, trimmed
1 teaspoon sea salt

Method

  1. Heat the oil in a large saucepan, add the onion, garlic, ginger and chilli and stir-fry on a medium heat for 10 minutes until the onion is golden brown and softened.
  2. Add the curry powder and stir-fry for a further minute, before adding the green beans and 100ml water. Stir briefly, then cover and cook for 6-7 minutes until the green beans are just cooked through. Uncover and simmer for a further minute to evaporate the remaining water. Season to taste with the salt, and serve hot with Rice and Peas.
