Ingredients

2 tablespoons vegetable oil
500g corned or minced beef
1 onion, finely chopped
1 stick celery, finely chopped
1 green pepper, finely chopped
50g tomato purée
2 teaspoons sea salt
freshly ground black pepper

Method

  1. Heat the oil in a large frying pan, add the beef and fry on a medium heat for 10 minutes, breaking up the meat with the back of a wooden spoon, until well browned.
  2. Add the onion, celery and pepper and stir-fry for a further 10 minutes to soften. Add the tomato purée, stir briefly, then add 500ml water and simmer uncovered for 20 minutes. Taste and season with more salt, and pepper as needed, and serve with rice.
