Ingredients

2 sea bream or red snapper
1 lime, juiced
sea salt
freshly ground black pepper
3 tablespoons vegetable oil
1 onion, finely sliced
1 red pepper, cut into fine strips
1 green pepper, cut into fine strips
1 carrot, cut into fine strips
1 scotch bonnet chilli, deseeded and thinly sliced
1 teaspoon allspice berries
100ml malt vinegar
1 teaspoon sea salt

Method

  1. Cut 2 slashes on each side of the red snapper, then rub with the lime juice, salt and pepper. Refrigerate while you prepare the vegetables.
  2. Heat the oil in a large frying pan on a medium heat, add the fish and fry for 5 minutes on each side. transfer to a plate and keep warm in a low oven.
  3. Add the onion, peppers, carrot and chilli to the frying pan and stir-fry on a high heat for about 5–6 minutes until the vegetables are just turning soft. Add the allspice berries, vinegar and salt and simmer for 2–3 minutes.
  4. Tip the vegetables and liquid over the fish, and serve immediately.
