Ingredients

250g salted cod
2 tablespoons vegetable oil
1 onion, finely sliced
3 spring onions, finely sliced
3 garlic cloves, finely chopped
2 sprigs thyme
1 red pepper, finely sliced
1 yellow pepper, finely sliced
1 scotch bonnet chilli, deseeded and finely chopped
1 x 540g can ackee, drained and gently rinsed
freshly ground black pepper

Method

  1. Place the salted cod in a bowl of cold water, and soak for 4 hours, changing the water every hour.
  2. Heat the oil in a large frying pan, add the onion, spring onions, garlic, thyme, peppers and chilli and stir-fry for 10-12 minutes on a medium heat until softened.
  3. Pulse the drained saltfish in a food processor to shred, then add to the peppers together with the ackee. Stir-fry for a further 5 minutes, then taste and season with black pepper. Serve with Fried Bake and Plantain Wedges.
