6 tea bags
or 6 rounded tsp black tea
12-16 whole cloves
2-3 teaspoons grated lemon peel
220g sugar
60-250ml lemon juice
2 pieces crystallised ginger, cut lengthwise in halves

Method

  1. Pour 3 cups boiling water to the tea. Add cinnamon sticks, cloves, and lemon peel and steep for five minutes. Remove tea bags. Add sugar and stir until dissolved, then strain. Return cinnamon sticks to the tea. Add lemon juice, 6 cups boiling water, and ginger pieces and gently stir. Serve from your favourite teapot.
