One-pot chocolate cake

Ingredients

250g soft butter
150g dark chocolate, chopped
220g caster sugar
250ml strong coffee
150g plain flour
100g self-raising flour
50g cocoa
2 eggs

Method

  1. Preheat oven to 180°C.
  2. Butter a 22 cm springform cake tin, line the sides and bottom with baking paper and butter lightly.
  3. Place the butter, chocolate, caster sugar and coffee in a large saucepan. Cook over a medium heat, stirring occasionally, until everything melts. Remove from heat and allow to cool slightly.
  4. Sift the flours and cocoa together and add to the cooled chocolate mixture, along with the eggs. Beat well until all ingredients are combined.
  5. Spoon into the prepared cake tin and bake in the preheated oven for 45 minutes. Test the cake by inserting a skewer. If it comes out clean, the cake is ready; if it doesn’t, cook for a further 5 minutes and test again.
