Banana and walnut cake

Ingredients

125g soft butter
220g caster sugar
2 eggs
225g self-raising flour
1 teaspoons vanilla extract
2 ripe bananas, mashed
90g walnuts, chopped, optional

Method

  1. Preheat oven to 180°C.
  2. Cream butter and sugar until light and fluffy. Add eggs, one by one, incorporating well after each addition. Stir through flour, vanilla, mashed banana and walnuts.
  3. Spoon into a greased and lined log tin 23 1/2 cm × 13 1/2 cm × 7 cm and bake in preheated oven for 20–25 minutes. Check the cake with a skewer. If it comes out clean the cake is cooked; if not, cook for a further 5–10 minutes and try again.
