Fried squid with lemon and salt

Ingredients

Quantity Ingredient
2 tablespoons plain flour
1 egg, lightly beaten
40g panko
150g cleaned squid, cut into 1 cm rings
oil, for frying
1/2 tablespoon salt
1/2 lemon, halved and thinly sliced

Method

  1. Put the flour, egg and panko in separate bowls. Dust the squid in the flour, dip in the egg, then coat with the panko.
  2. Pour enough oil into a wok or deep frying pan to come one-third of the way up the side and place over high heat until shimmering. Add the squid and cook for 30 seconds on each side, or until lightly golden. Remove and drain on paper towel.
  3. Place the salt in a bowl, top with the lemon slices and serve alongside the squid. The idea is to squeeze over the lemon and sprinkle with the salt.
