Ingredients

Quantity Ingredient
60ml japanese soy sauce
2 tablespoons mirin
2 tablespoons sake
1 tablespoon sugar
8 spring onions, cut into 4 cm lengths
8 bamboo skewers, soaked in water for 30 minutes
1 tablespoon oil

Method

  1. Combine the soy sauce, mirin, sake and sugar in a small bowl and set aside.
  2. Bring a saucepan of water to the boil. Add the spring onion and cook for 1 minute, or until just tender. Drain and quickly put the spring onion into a bowl of cold water until cool. Drain well, then thread four spring onion pieces onto each skewer.
  3. Preheat a chargrill pan or barbecue hotplate to high and brush with the oil. Cook the skewers for 2–3 minutes on each side, or until the spring onions are golden and softened.
  4. Brush the soy mixture over the spring onion and cook for another minute on each side, or until golden.
