Shiitake and sesame skewers

Ingredients

Quantity Ingredient
60ml japanese soy sauce
2 teaspoons caster sugar
1/2 teaspoon sesame oil
8 large shiitake mushrooms, stems removed
4 bamboo skewers, soaked in water for 30 minutes
1 tablespoon oil
1 spring onion, finely sliced, to serve

Method

  1. Combine the soy sauce, sugar and sesame oil in a bowl. Add the mushrooms and set aside to marinate for 3 hours.
  2. Thread two mushrooms onto each skewer.
  3. Heat a chargrill pan or barbecue hotplate to high and brush with the oil. Cook the skewers for 2–3 minutes on each side, or until the mushrooms have softened and are browned around the edges.
  4. Scatter on the spring onion and serve.
