Chicken skewers with sake and soy

Ingredients

Quantity Ingredient
4 boneless, skinless chicken thighs
12 bamboo skewers, soaked in water for 30 minutes
finely sliced spring onion, to serve
steamed rice, to serve

Marinade

Quantity Ingredient
2 tablespoons sake
2 tablespoons japanese soy sauce
2 tablespoons mirin
1 1/2 tablespoons lemon juice
1 spring onion, thinly sliced

Method

  1. Combine the marinade ingredients in a shallow dish. Add the chicken and set aside to marinate for 30 minutes.
  2. Remove the chicken, reserving the marinade, and pat dry with paper towel. Insert three skewers into each fillet.
  3. Preheat the griller to medium–high. Place the skewers on a baking tray. Grill, basting occasionally with the reserved marinade and turning, for 12 minutes, or until cooked through.
  4. Scatter with the spring onion and serve with the rice.
