Ingredients

Quantity Ingredient
1 teaspoon japanese soy sauce
1 teaspoon sake
1 teaspoon mirin
1 teaspoon grated ginger
2 teaspoon cornflour
230g minced chicken
4 bamboo skewers, soaked in water for 30 minutes
1 teaspoon oil

Glaze

Quantity Ingredient
1 tablespoon japanese soy sauce
1 teaspoon mirin
1 teaspoon caster sugar

Method

  1. Combine the soy sauce, sake, mirin, ginger and cornflour in a bowl. Add the minced chicken and stir well.
  2. Use wet hands to roll the mixture into 12 balls. Put the balls on a tray lined with baking paper and place in the fridge for 30 minutes.
  3. Meanwhile, place the glaze ingredients in a small bowl and stir to dissolve the sugar.
  4. Thread three balls onto each skewer. Lightly brush a large frying pan with the oil and place over medium heat. Add the skewers and cook, turning and basting with the glaze, for 8 minutes, or until cooked through.
