Fish steamed with miso and mirin

Ingredients

Quantity Ingredient
4 tablespoons white miso
80ml mirin
2 teaspoons japanese soy sauce
4 150 g firm white fish fillet
1 spring onion, thinly sliced into lengths, green part only

Method

  1. Combine the miso, mirin and soy sauce in a small bowl.
  2. Wash the fish fillets and pat dry. Put the fish in a flat ceramic dish and rub all over with the miso mixture. Place in the fridge to marinate for 3–6 hours.
  3. Half fill a wok or large saucepan with water and bring to the boil. Line a bamboo steamer with baking paper and place the fish in the steamer, making sure the pieces do not touch.
  4. Sit the steamer on the wok or saucepan, cover tightly and steam for 10 minutes, or until the fish flakes easily.
  5. Sprinkle over the spring onion and serve.
