Dressing

Ingredients

Quantity Ingredient
175g japanese mayonnaise
1/4 teaspoon sesame oil
1/2 teaspoon mustard powder
2 tablespoons japanese rice vinegar
3 spring onions, finely chopped
3 tablespoons finely chopped flat-leaf parsley
salt and freshly ground black pepper
750g boiling potatoes, such as dutch cream or sebago
75g sliced leg ham

Method

  1. To make the dressing, combine the mayonnaise, sesame oil, mustard powder and vinegar in a bowl. Stir through the spring onion and parsley and season to taste.
  2. Peel the potatoes and cut into 2 cm pieces. Put the potatoes in a saucepan and cover with cold water. Bring to the boil over high heat. Reduce the heat to low, cover with a tight fitting lid and cook for 20 minutes, or until tender.
  3. Drain the potatoes and rinse under cold water until completely cool. Put into a large bowl with the ham, pour over the dressing and gently toss to combine.
