Dressing

Ingredients

Quantity Ingredient
40g black sesame seeds
1 teaspoon sugar
2 tablespoons white miso
2 tablespoons mirin
300g green beans, trimmed and cut into 4 cm lengths
toasted sesame seeds, optional,to garnish

Method

  1. To make the dressing, put the sesame seeds in a non-stick frying pan. Cook over medium heat, shaking the pan, until the seeds just start to smoke and become aromatic. Remove from the pan and allow to cool. Pour the seeds into a suribachi or mortar and pound until finely crushed. Add the sugar, miso and mirin and stir to make a paste.
  2. Bring a large saucepan of water to the boil. Add the beans and cook for 2 minutes, or until just tender. Drain, then put the beans into a bowl of ice water until completely cool.
  3. Drain the beans well and combine in a bowl with the dressing. Sprinkle over the toasted sesame seeds, if desired.
