Miso dressing

Ingredients

Quantity Ingredient
2 tablespoons white miso
1 tablespoon japanese rice vinegar
1 teaspoon mirin
1/2 teaspoon caster sugar
1/4 teaspoon japanese mustard
200g frozen edamame beans, in the pod
handful mizuna or rocket leaves

Method

  1. To make the miso dressing, combine all the ingredients in a small bowl with 1 tablespoon of warm water. Set aside for 1 hour to allow the flavours to develop.
  2. Half fill a wok or large saucepan with water and bring to the boil. Put the edamame in a bamboo steamer and sit it over the top of the wok or saucepan. Cover tightly and steam for 5 minutes, or until tender. Allow to cool slightly, then remove the beans from the pods.
  3. Combine the edamame and mizuna or rocket in a large bowl and drizzle with the miso dressing to serve.
