Method

  1. Sift together 100 g plain flour and 1 teaspoon baking powder. Melt 90 g butter with 1 tablespoon mild honey. Put 2 eggs in a food processor with 170 g caster sugar, 1 tablespoon soft brown sugar, a pinch of salt and 1 teaspoon natural vanilla extract. Add the melted butter and honey and process until smooth. Add the flour and baking powder and process until combined. Preheat the oven to 180°C. Butter a 6-hole giant muffin tin and divide the batter among the holes. Core 2 apples and dice into 1 cm pieces. Divide the pieces between the cakes. Bake for 15–18 minutes, until firm and golden brown.
