Method

  1. Cook 200 g spelt in boiling water. Drain and rinse.
  2. Dress with 1 crushed garlic clove, grated zest of 1 lemon, juice of ½ lemon, 60 ml extra-virgin olive oil, salt and pepper.
  3. Stir in 2 tablespoons each of chopped flat-leaf parsley and mint, 2 chopped spring onions, 25 g chopped pistachio nuts and a large handful of pea shoots.
