Method

  1. Mix 100 g dry brown breadcrumbs with 75 g grated parmesan, 1 tablespoon chopped parsley, 2 tablespoons linseeds, salt and pepper.
  2. Dip boneless, skinless chicken thighs or fish fillets into 2 beaten eggs and then in the breadcrumb mixture.
  3. Place the fillets on a baking tray and cook in an oven preheated to 180°C for 40 minutes (chicken thighs) or 15–20 minutes (fish fillets).
