Magdalena's botwinka salad of young beetroot leaves

Magda and I met as children in the seaside resort of Jarosławiec. We hit it off immediately, as did our parents, and according to the holiday snaps we spent the remainder of our time in Jarosławiec together. Now in our mid-thirties we still go on little holidays together whenever we get the chance and spend a lot of that time talking about food. Magda is the queen of vegetables, this is her salad, made from young beetroot leaves with the addition of some toasted pumpkin seeds – one of my all-time favourite salad toppings.

Ingredients

Quantity Ingredient
8 small new potatoes
25g unsalted butter
large handful chopped dill
200g young beetroot leaves
2 tomatoes, chopped
4 slices parma ham
handful pumpkin seeds, toasted

For the vinaigrette

Quantity Ingredient
4 tablespoons extra-virgin olive oil
2 tablespoons truffle-infused balsamic vinegar
salt, to taste
black pepper, to taste

Method

  1. Cook the new potatoes in boiling, salted water until tender, then drain and combine with the butter and chopped dill.
  2. Meanwhile combine the vinaigrette ingredients in a lidded jam jar and shake well to mix it all together.
  3. Place the young beetroot leaves and chopped tomatoes on a large serving plate and pour over the vinaigrette. Arrange the buttery dill potatoes over the top, followed by the parma ham. Finish by scattering the toasted pumpkin seeds whimsically over the top.
