Method

  1. Simple Matjas herrings are the ones we use in this book. You can get various Matjas herrings, in different sauces but when I refer to Matjas herrings, I mean the simplest ones. These are sold in a flat packet with a few herring fillets, just in oil. Back in the homelands, you used to get herrings straight out of the barrel and then soak them in milk or water to remove their salt. You can find these in every Polish shop.
