I never make plain potato mash any more. Since my aim is always to increase the amount of vegetables our family eats, I mix in mashed swede, grated carrots, puréed cauli ower, and always something green. This version is a great way to up the greens intake without sacrificing flavour.

Ingredients

Quantity Ingredient
1 small celeriac, peeled and roughly chopped
2-3 medium potatoes or white sweet potatoes, peeled and quartered
120g kale, thick stems removed, chopped
1 quantity Roasted garlic
40g butter
sea salt

Method

  1. Cook the celeriac and potatoes separately in a little water until tender, adding more hot water after 10 minutes if necessary. Drain.
  2. Meanwhile, steam the kale until wilted, then refresh under cold running water. Blitz in a food processor or finely chop using a very sharp knife.
  3. Squeeze the roasted garlic from its skins into the potatoes, then pass the mixture through a potato ricer or food mill. Use a stick blender or food processor to blend the celeriac until smooth, then mix into the potato mash. Stir in the butter, chopped kale and salt to taste.
