Flower sprouts with anchovies and roasted garlic

Flower sprouts are a newly developed vegetable that look like tiny cabbages with green frilly leaves and streaks of purple. They are related to Brussels sprouts, but have a more subtle flavour and are richer in vitamins B6 and C. In this recipe you could substitute steamed cavolo nero or other leafy greens for the flower sprouts.

Ingredients

Quantity Ingredient
1 tablespoon extra virgin olive oil
3 anchovy fillets in oil
1/2 quantity Roasted garlic
250g steamed flower sprouts
lemon juice, to taste
sea salt
freshly ground black pepper

Method

  1. Gently heat the olive oil in a large pan and add the anchovies and garlic, squeezed out of its skins. Use a fork to mash both into the oil.
  2. Increase the heat a little, shake off any excess liquid from the steamed flower sprouts and add to the pan. Sauté for a few minutes, add salt and pepper to taste and squeeze over some lemon juice. Serve immediately.
