This spicy little number is the perfect dressing for crunchy slaws or noodle salads, or to add some zing to steamed rice, as well as to briefly marinate chicken or sh, and to drizzle over grilled meat. It freezes well.

Ingredients

Quantity Ingredient
1 tablespoon galangal or ginger, peeled and roughly chopped peeled
1 red chilli, trimmed and roughly chopped
2 lemongrass stalks, trimmed, tough outer layers removed, roughly chopped
1 garlic clove, peeled and bashed with the back of a knife
2 medium spring onions, trimmed, green and white parts roughly chopped
2 limes, juiced
2 teaspoons fish sauce
2 teaspoons tamari or shoyu
2 tablespoons untoasted sesame oil or extra virgin olive oil
25g coriander, stems and leaves
50g mint, leaves only
1 heaped tablespoon palm sugar, to taste

Method

  1. Put all the ingredients in a blender and blend until smooth.
